The Perfect Vegan Smoothie

One easy way to start your day with a vegan plant-based meal is to have a smoothie! It is a faster alternative to a traditional breakfast and way healthier than just grabbing a muffin or bagel.

Your smoothie can have as little as two ingredients or as many as 20 and you can mix and match for endless varieties. It can be sweet or savory (think soup). But you basically want to include something from each of these categories:

  1. Liquid base like almond, hemp, cashew, rice or flax milk, juice, coconut water, or just plain ole water
  2. Fruits and/ or veggies like berries, kiwi, bananas, pineapple, dates, oranges and mango, red pepper, tomato, cooked sweet potato, squash
  3. Greens like spinach, lettuce, kale, cilantro, and parsley
  4. Nuts, seeds and grains like almonds, walnuts, hemp seeds, flax seeds, chia seeds, rolled oats, cooked quinoa or millet
  5. Add-ins like cinnamon, nutmeg, turmeric, maca powder, spirulina or wheatgrass

I like my morning smoothie to be on the sweet and creamy side and blueberries are my go-to fruit. Here is my favorite recipe:

Favorite Blueberry Smoothie

Yields 1-2 servings

Ingredients

  • 1 banana
  • ½ cup frozen blueberries
  • 2 dates
  • 1 tablespoon golden flax seeds
  • 1/2 teaspoon organic peanut butter (sub almond butter or fresh nuts for better health)
  • Ice, 3-5 cubes (you can freeze bananas in place of ice
  • Water as needed (use rice, cashew, almond, soy or hemp milk for creamier smoothie)
  • Dash of sea salt

Directions

  1. Add ingredients in order listed.
  2. Add ice on the top and blend until smooth. Add liquid and ice as needed for desired consistency.

And a green smoothie:

Green Zesty Smoothie

Yields 1-2 servings

Ingredients

  • 1/2 of a banana
  • 1 cup grapes, or concentrated grape juice
  • 3/4 inch slice lemon, peel and seeds included
  • Handful of frozen or fresh pineapple
  • Two large handfuls of spinach
  • 1 tablespoon chia seeds (optional), soaked in a little warm water first
  • Ice, to top of blender
  • Water as needed

Directions

  1. Add ingredients in order listed.
  2. Add ice on the top and blend until smooth. Add liquid and ice as needed for desired consistency.
